Mom and I spent the day together recently down in the Virginia country. Her friend from high school, who she was maid of honor for at her wedding, was celebrating her 50th Anniversary. My mom looks much younger for her age, so when I hear 50 years, I am boggled - even though I am 47. LOL ;)

Anyway, on the way home from the country, mom and I stopped by this Farmers Market that we love. She bought me two green tomatoes and some of the cutest, tiny little red potatoes. Of course I had to make BAKED Fried Green Tomatoes. I wasn't quite sure of the recipe, but my concoction turned out pretty amazing and I just baked them in my small toaster oven.
Of course, I started with the green tomatoes, sliced to about 1/4" thickness.
I used 1/2 cup regular unsweetened almond milk in one bowl and in the other bowl, I mixed 1/4 cup flour, 1/4 cup yellow cornmeal, 1/2 tsp sea salt and dash of black pepper.
I preheated the oven to 400 degrees - and again, I just used my small toaster oven. I put aluminum foil on the baking sheet and sprayed it with cooking spray.
Dip the slices of tomatoes in the milk and then dip in the flour mixture. Place them on the baking sheet.
I baked the tomatoes for about 20 minutes and flipped them about halfway through baking.
While the tomatoes were baking, I also cooked the cute little red potatoes with a little salt and vegan butter. Perhaps not the healthiest meal of all time, but O.M.G......so delicious!!!
